Adjust Servings:
2kg Oxtail
2 Large Onions
50g Flour
50g Butter Cubes
1kg Carrots
300g Celery
a bunch Rosemary
Olive Oil
2 cloves Garlic Cloves
1 Fresh Bunch Thyme Leaves
4tsp Hot Paprika
1 glass Red Wine
2 Bay Leaves
1 Beef Stock
50g Tomato Paste
pinch Salt

  1. Coat the oxtail pieces liberally in seasoned flour.
  2. Heat the butter and oil in the Pot
  3. Brown the meat and set aside.
  4. Add the prepared onion, garlic, carrot, celery and rosemary and Pan fry until softened.
  5. Add the meat, followed by the hot stock, tomato paste and wine.
  6. Cover and simmer gently over moderate heat for 4 hours.
  7. Add more wine if the liquid evaporates too rapidly.
  8. Season to taste and serve with homemade bread
